Dining Room Skills
LA-16P – Professional – 8 Hours - $100

Learn not only the practices of table service, but also giving introductions, delivering soft up-sell and building a relationship to develop regulars without seeming invasive. Presentation is everything in fine dining. Develop setting expertise in polish, utensil setting and napkin folds. By impressing guests with knowledge of serving wine, balancing trays above the shoulder and offering the check when all the silverware is piled in the dish, you can become an impressive insider to the restaurant industry.

Knife Skills and Mise en Place
LA-19B – Beginner – 6 Hours - $100
Like packing a suitcase for a long trip, a good cook must lay out his or her workstation with the essentials and have all ingredients on-hand to create a successful dish. A chef instructor explains knife skills–proper way to hold the handle, how the weight of the blade will to do most of the work and the secret to slicing while keeping all of your fingers intact. Our Chefs will also teach you to construct proper mise en place, a French term meaning “everything in place.” We will cover some basic prepped foods to have on hand which will make you cook like a pro.

So you want to use that room in your home, the one with the fridge and microwave, to do more than just store and reheat to-go boxes? For those new to cooking, learn safety and sanitation guidelines, how to recognize common foods and explore ways to prepare them with your basic tools. Perform practical knife cuts and set up your work station for culinary efficiency. Our chefs will cover some basic cooking techniques and show you how to make some classics like vinaigrettes; roasted potatoes, properly cooked pasta, egg cookery and classic sauce production. You’ll leave knowing how to make much more than just reservations.
